Prepare, make, and properly care for
Rinse all parts by hand with warm water before first use. Before initial use and before each subsequent use, place the bamboo whisk in warm water for about one minute to soften the tines; a dry whisk used dry will break at the tips, and the broken pieces will end up in the tea. For preparation, add about one to two spoonfuls of matcha through the sieve directly into the bowl. Allow the water to cool to about 70 to 80 °C (158 to 176 °F) – boiling water makes matcha bitter because it dissolves the leaf components too strongly. Pour in about 60 to 80 ml (2 to 2.7 fl oz) and move the whisk briskly through the liquid in a W or zigzag pattern, not stirring in circles; the straight motion creates the fine-pored foam layer. Finally, slowly draw the whisk through the surface to break up large bubbles. Pour the finished matcha over the spout or drink it directly from the bowl. Care: Rinse the whisk immediately after use under running warm water, without dish soap and without squeezing it. Then place it with the tines facing upwards on the whisk holder and allow it to air dry completely; a damp bamboo whisk stored away will mold between the tines within a few days. Never put the whisk in the dishwasher, do not soak it, and do not dry it in the microwave. Also, rinse bamboo spoons and spatulas briefly and wipe them dry, do not soak them. Clean ceramic parts by hand with mild dish soap and do not use abrasive cleaners or steel wool, as this will dull the glaze. Do not allow ceramic to transition from hot to cold or vice versa – do not pour cold water into a hot bowl, as the glaze may crack. Tap out and rinse the sieve immediately after use while the powder is dry; dried matcha will stick in the mesh. Wash the cloth at a low temperature and air dry. Store all parts completely dry, not in a closed cabinet immediately after use.
